Ingredients
1 cup cooked brown rice
1 cup cooked black beans, rinsed if canned
1 cup steamed mixed vegetables such as broccoli, bell pepper, and carrots
1/2 cup diced tomatoes
1/4 cup low fat shredded cheese, optional
2 tablespoons chopped fresh cilantro
Juice of 1/2 lime
1/2 teaspoon olive oil
Garlic powder and black pepper to taste
Directions
Wash hands with soap and water.
In a large bowl, combine cooked brown rice, black beans, steamed mixed vegetables, and diced tomatoes.
Drizzle with lime juice and olive oil.
Sprinkle with garlic powder, black pepper, and chopped cilantro.
If using, add low fat shredded cheese on top.
